Groundnut
Apios americana Groundnuts contain nearly 3 times the amount of protein as potatoes. Collect their roots and seeds all winter long. Contain naturally occuring isoflavones which are being studied for the prevention of breast cancer. Roots are best cooked like other legumes. Use the roots just as you would potatoes. The seeds can be ground and added to any bread mix. Soak the seeds overnight and cook like lentils. |
